Olive Oil PDO Vallée des Baux-de-Provence by Estoublon. Balanced, intense, vegetal. On the palate, the combination is wonderfully exquisite. There are touches of freshly-cut grass with a slightly fervent finish. Nice balance of varieties. The harvest took place from early November to mid-December. Pressed in the Domaine mill within 24 hours of harvesting.
