Le Paulmier  rice vinegar is made from Camargue rice through alcoholic and acetic fermentation.

  • Le Paulmier is an artisanal vinegar maker nestled between the Camembert and Livarot valleys, in the heart of Normandy. A flavors artisan and a defender of the natural resources of the Pays d'Auge in Normandy, Benoît creates vinegars and condiments from his heart, passionately served by a fragile and exceptionally diverse terroir. He makes the most of the natural resources of the Pays d'Auge: apple ciders and pear ciders, wild plants from pastures, hedgerows and forest environments. Alcoholic fermentations, traditional acetic fermentations, barrel macerations of aromatic plants from spontaneous flora, old-fashioned ageing in oak or acacia casks, smoking with local hardwoods: Le Paulmier enjoys exploring new avenues in the journey of plant matter, servicing taste and bocage.
