Fortissima 80%. This dark chocolate is François Pralus's first recipe and one of his rare blends. Its high percentage compared to the rest of the range, 80%, gives it its name. Our master chocolatier wanted it to be powerful and selected beans with aromatic profiles that each bring their own identity and qualities. Criollo, Forastero, and Trinitario for cocoa notes, fruity notes, tartness, and a hint of smokiness.
