Le Paulmier Douglas fir vinegar is an aromatic tree that reveals pronounced and persistent citrus notes ranging from lemon to lemongrass. Harvested in the forests of Orne, the annual shoots are macerated in barrels to release all their aromas.

Le Paulmier is an artisanal vinegar maker nestled between the Camembert and Livarot valleys, in the heart of Normandy. A flavors artisan and a defender of the natural resources of the Pays d'Auge in Normandy, Benoît creates vinegars and condiments from his heart, passionately served by a fragile and exceptionally diverse terroir. He makes the most of the natural resources of the Pays d'Auge: apple ciders and pear ciders, wild plants from pastures, hedgerows and forest environments. Alcoholic fermentations, traditional acetic fermentations, barrel macerations of aromatic plants from spontaneous flora, old-fashioned ageing in oak or acacia casks, smoking with local hardwoods: Le Paulmier enjoys exploring new avenues in the journey of plant matter, servicing taste and bocage.
