An icon of Estoublon for nearly 20 years, the Couture bottle has been redesigned. More assertive and sculptural, it embodies a new vision of our quest for excellence. Guided by a passion for detail, Victor Joyeux, the estate’s oenologist, has created an exceptional blend from a meticulous selection of plots. A vibrant Grand Cru olive oil, the ultimate expression of our expertise. On the nose, a frank, clean, lively attack. The first impression is striking with its vegetal notes and bursting fruitiness, evoking crisp rocket or freshly cut Mediterranean herbs. On the palate, the profile unfolds with complexity: a precise and balanced structure carried by the slightly bitter vegetal character of raw artichoke and tomato leaves. The finish is smooth, with a subtle, lingering hint of green almond that prolongs the tasting experience with a lovely sensation of silky freshness on the palate, without excessive sharpness.

SUGGESTIONS
This olive oil reveals its full delicacy on a sea bass carpaccio seasoned with a touch of black lemon. It pairs harmoniously with the sweetness of fresh figs and the intensity of a mature cheese, for a subtle and refined late summer pairing. It also enhances a beef tournedos accompanied by candied porcini mushrooms. For a fresh and delicious pairing, enjoy it with basil and strawberry sorbet.
